The head chef of KOMAT shares his passion for Bulgarian cuisine
GastronomiX 2026 – the forum for haute cuisine, taking place from January 27 to 30, 2026, at the Inter Expo Center, brings together leading culinary talents and professionals from Bulgaria and around the world. Among them will be Chef Todor Grablev – a young Bulgarian talent with an impressive international career. Following his passion for the culinary arts, he has gained experience in prestigious kitchens across Europe, the USA, and Australia, and today he serves as the head chef of the KOMAT restaurant in Sofia.
Chef Todor Grablev will showcase his international culinary experience at GastronomiX 2026
A graduate of the Sofia Vocational High School of Tourism and the HRC Culinary Academy, Todor began his professional journey with prestigious internships at AndaZ in Amsterdam, continued in San Francisco, and then in Paris with the team of Yannick Alléno. His experience eventually brought him back to Bulgaria with the opening of Tables restaurant in Sofia and Plovdiv, followed by new challenges in elite kitchens across Europe and Australia.
Since January 2025, Todor Grablev has been leading the kitchen at KOMAT, where his philosophy meets modern gastronomy – working with small Bulgarian producers, seasonal ingredients, and pure, elegant flavors. In his kitchen, classical techniques combine with a modern approach to create an authentic and balanced culinary experience.
Described as an “exploratory” chef, Todor and his team constantly search for Bulgarian culinary treasures and transform them into contemporary gastronomic experiences. KOMAT has already received a series of prestigious awards and holds a well-deserved place on Sofia’s culinary map.
