His experience eventually brought him back to Bulgaria with the opening of Tables restaurant in Sofia and Plovdiv, followed by new challenges in elite kitchens across Europe and Australia.<\/p><p>Since January 2025, Todor Grablev has been leading the kitchen at KOMAT, where his philosophy meets modern gastronomy \u2013 working with small Bulgarian producers, seasonal ingredients, and pure, elegant flavors.
